Fidget spinner cookies! #delish

Hey, fellow unicorns! Trends have a tendency to have an impact on our lives. As soon as a trend goes viral, all of a sudden everyone is talking about it and everyone wants to be a part of the trend somehow because apparently, it is the only way to stay up to date with the InterWeb. Usually, I love trends and love to follow it even more but recently any trend becomes viral even when it does not make any sense especially the trend of Fidget Spinners! I seriously don’t understand why it went viral and why everyone was ready to throw their hard earned cash on something that had no purpose at all. Everyone was mesmerized by this toy including my brother, my grandparents and even my cat! 😀 But even when I don’t get the craze behind this trend, I have to agree that it was a genius idea by the creator Scott McCoskery (Yes, I googled that!) because the entire world fell for it. To top it all, there was so many cool and amazing fidget spinner themed things people did as an homage to this viral trend and one thing that really caught my attention were the fidget spinner cookies (no surprise there! 😀 ) and I knew I had to at least try to recreate it. It was a challenging experience since I am not a pro at cooking and I am the clumsiest person that you would probably meet (ok exaggerating a little bit now!) but they turned out to be really delicious and would make a fun treat to show off your prowess in cooking in front of your friends. THINGS YOU WILL NEED…

  • FOR ROYAL ICING-
  • 500 gm powdered sugar
  • 1 med egg
  • Food Color
  • 2 tsp water
  • FOR COOKIES-
  • 21/2 Cup all purpose flour
  • 3/4 cup powdered sugar
  • 1/4 tsp salt
  • 1 cup butter
  • 2 tbsp cream cheese
  • 1/4 tsp vanilla essence
  • 1tsp baking powder
  • A fidget spinner
  • A bottle cap

METHOD-

  • FOR ROYAL ICING-
  • Take a bowl, pour the powdered sugar and add the egg and water in the bowl and whipped it continuously for 10-15 minutes till it forms a gummy texture.
  • Divide the mixture into three bowls and add green color to one and orange to another (or colors of your choice) and the third one will be the plain.

  • FOR COOKIES- 
  • Take a bowl, pour the flour, sugar, baking powder, salt and mix it up.
  • Add the butter, cream cheese, vanilla essence and mix it properly till it becomes one dough.
  • Wrap the dough with a plastic wrap and chill it in the fridge for about 30 minutes.
  • Once the dough is ready, sprinkle some flour on the rolling board and flatten it out using a rolling pin.
  • Place the fidget spinner on the dough and trace the shape with the knife and put it on the baking tray.
  • Take the bottle cap and press down on the dough to make the spinner head and place them on the pre-buttered tray.

  • Pre-heat the oven for 5 minutes at 350F or 180C and place the tray in the oven for 15 to 20 minutes until they are golden brown.
  • Put all the icing in three plastic bags and snip off the ends to make a piping bag.
  • Put the white icing on the spinner head and green and orange icing tracing the spinner and refrigerate it for 5-10 minutes before munching on!

Tri-colored choco chip cookies! #delish

Hey, fellow unicorns! Looking at the amazing yet hilarious reaction to my previous blog, it was mandatory to do another trend blog but this time with a twist because it was one of my most viewed blogs. There has been a trend circulating the food blogosphere about different types of unicorn and rainbow themed cuisines especially cookies- which happens to be my favorite <3! But I didn’t want to copy paste the same recipe by recreating it, so I decided to add my own touch to it. Instead of rainbows, I thought why not do something that shows my love for both cooking as well as my country! And what better way than a Tri-colored Indian flag inspired choco chip cookies. It was such a fun and creative experience but I ended up with Shrek hands because of the food color! 😀 But don’t worry I learned from my mistakes and had a glove on for the second batch. It is such an easy recipe with basic items, is prepared within 20 minutes max and tastes delicious (munching on the third cookie!). I had so much fun playing with so many colors and this will be a hilarious and memorable activity to do with your buds. So get your chef hat on and let’s get cooking…

THINGS YOU WILL NEED…

  • 11/2 cup all purpose flour
  • 1 tsp baking powder
  • 1 egg
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 cup butter
  • 1/2 tsp vanilla essence
  • pinch of salt
  • choco chips
  • green and orange food color

LET’S GET STARTED…

  •  In a large mixing bowl, mix the butter and sugar till the sugar is completely coated with the butter.
  • Add vanilla essence, and egg to the mixture and mix it till it is one gooey mixture.
  • Sift the flour through the sieve with the baking powder and salt in it so that the big chunks get separated from the fine powder.
  • Mix it properly so that it becomes one big dough.
  • Divide the dough into three small doughs.
  • Add a handful of choco chips for the extra chocolate.
  • Take 1/2 tsp of green food color mixed with a little amount of water and mix it thoroughly with one dough. Do the same with the orange color and mix it with the second dough and let the third one be the plain cookie dough.

  • Roll all the three doughs on the hand to make it a long log and press them together so that the plain dough is in between the green and orange dough.
  • Take a clean knife and cut it into small pieces and pat the small piece into a circle and place it on a greased pan.

  • Pre-heat the oven on 350-degree Fahrenheit for 5 minutes.
  • While the oven is preheating, put some choco chips on the top and press them so they won’t fall out.
  • Pop them in the oven for 20-25 minutes until golden brown, allow them to cool and then you could enjoy your delicious cookies filled with patriotism.

The ultimate substitute for chocolate! #delish

Hey, fellow unicorns! Before starting this blog, I would like to thank everyone for the amazing response towards my humble blog. Why am I being so cheesy? It’s because my blog surpassed 1.5K views yesterday (yippee! :D) and I know the numbers are not that huge but it is a milestone for me so thank you for helping me check one off out of my bucket list! ❤ So, most of you would have clicked on the link wondering what the ultimate substitute for chocolate is and no this is no click bait! The ultimate substitute for chocolate is (drum rolls please! :P) NOTHING! There is no substitute for ‘the greatest invention on planet earth’. But I have able to make something that even though is not as satisfying as chocolate but is pretty close when you are craving chocolate but beating yourself up because you started a new diet yesterday! It’s alright we have all been there :D! I am talking about the homemade energy bar that is super easy to make and super healthy that you can munch on without piling up on those nasty no-good calories. I started working out and since I am the biggest chocolate fan you would ever meet, I would have devastating cravings for chocolate especially after a workout so I had to come up with something that is equally tasty but healthy at the same time that’s when I came up with these babies. And the amazing part is that you can customize it with ingredients that you like and by no means have to follow word by word. So let’s get started!

THINGS YOU WILL NEED-

  • Chocolate cookies
  • 1 bowl oats
  • Honey
  • Raisins
  • Dried cranberries
  • Almonds and Pistachios
  • Dark chocolate chips

METHOD-

  • Take the pack of chocolate chip cookies and crush them with a heavy object in a big bowl.
  • Take the oats as much as would like and pour it into the bowl with the crushed cookies and mix them.
  • Add the raisins, cranberries, almonds, pistachios and chocolate chips in the bowl and mix them well.
  • Finally, add honey as per your tolerance for sweetness and mix it all so it becomes sticky enough to stick to your hands.

  • You can either take a stencil or pour it all on the plate and flatten it till it becomes one. The moisture in raisins, cranberries, and honey would help become one product.
  • I used a stencil to make it look presentable for the blog but you can easily flatten it on the plate and put in the refrigerator for a half hour and then cut it in rectangular pieces and munch it whenever you get a chocolate craving.

  • You can add any of your favorite dry fruits with the cookies, oats, and honey and customize it as you want.

Cheesy chicken nuggets! #delish

Hey, fellow unicorns! It has been a whole entire week since I wrote my last food blog and as a die hard foodie, it was only time till I wrote my next one. I am by no means a professional chef but when I crave some good food and feel totally lazy to step outside, I can be a pretty good cook (with some cuts and bruises of course! :D). Today I was craving something savory and by savory I meant chicken! So I decided to make some chicken nuggets that I could enjoy watching a comedy movie. I went to my refrigerator to rummage through for the ingredients when I saw my good old pal ‘cheese’ and I thought why don’t I make the nuggets with a cheese surprise inside like those cool chefs do because chicken and cheese make a perfect couple for a midday snack and boy was I right! They turned out to be super awesome and it was only fair to share it with my lovely readers. Why don’t you give it a try too and impress everyone with your cooking prowess!

THINGS YOU WILL NEED:-

  • 250 gm boneless chicken
  • Salt
  • Pepper
  • Small amount of coriander
  • 1 Small onion
  • 1-2 green chilies
  • 1tbsp ginger garlic paste
  • 1tsp oregano
  • 1 tsp chilly flakes
  • Small amount of fresh mint
  • 4-5 garlic cloves
  • Any other spices that you prefer (1tsp would be enough)
  • 1 Boiled potato
  • Cheese cubes
  • Breadcrumbs
  • 1 egg

LET’S GET COOKING!

  • This is a pretty simple recipe that can be made within 15-20 minutes.
  • Take a food blender and add the chicken, mashed boiled potato, salt, pepper, coriander, onion, green chilies, ginger garlic paste, oregano, chili flakes, mint, garlic cloves, a few breadcrumbs and blend till it becomes a good dough.

  • Once the dough is ready, make small even balls from the dough and lay it on the parchment paper.
  • Flatten the chicken ball and put a small cube of cheese and roll it back into a chicken ball.
  • Take a bowl and add the egg with a pinch of salt and beat the egg in a good frothy mixture.
  • Take a flat plate and pour the breadcrumbs on the plate for coating.
  • Take the chicken balls, dip them into the egg mixture and immediately coat them with breadcrumbs.

  • Once all the chicken balls are ready and coated deep fry them in medium heat until golden brown and voila they are ready to be snacked on and once you open the chicken ball, you can witness the delicious cheese oozing out which makes it even more appetizing to eat.

Chocolate filled choco chip cookies! #delish

Hey, fellow unicorns! Monsoon is finally here which makes it the perfect season to enjoy long evening drives and delicious sweet and savory foods with our loved ones especially after the scorching heat wave that we call “summer” in Mumbai that literally makes us judge our / our parent’s decision of moving to a hot country instead of staying in an igloo in Antarctica :D. But as soon as it starts pouring the same place becomes a paradise and staying in an igloo becomes an impossible feat. And the best part of this season is the scrumptious food that we get to eat overlooking a pristine and romantic vista of the Mumbai city. My personal fav is the freshly baked chocolate chip cookies and like a wise man once said, ” Life is so much better with some freshly baked cookies”, I decided to make some cookies in mi casa. I, by no means, am a professional chef but the lovely weather was an inspiration to get my inner Sanjeev Kapoor on and guess what they turned out to be amazing! (*gives a pat on the back :p). So it was only fitting to share my silly version of baking with you cause sharing is caring <3. Have a look…

Things you will need-

  • 1 ½ cup all-purpose flour
  • ½ tsp baking soda
  • 1 large egg
  • ¼ cup sugar
  • ¼ cup brown sugar
  • ¼ cup butter
  • ½ tsp vanilla essence
  • Pinch of salt (to enhance the taste)
  • ½ cup choco chips
  • Any chocolate bar or nutella

Serves up to 7 large or 14 small cookies.

Let’s put it together-

  • Take a large mixing bowl, add butter and sugar to whisk it properly till it becomes one big gooey mixture.
  • Add vanilla essence, salt, egg and whisk again until it becomes a light and fluffy mixture (Don’t worry if the mixture is a bit runny, it will all come together)
  • Add baking soda to all purpose flour and sift the flour and soda through the sieve to remove any lumps.
  • Melt the chocolate beforehand to use it as your filling in the cookie.
  • Add the dry mixture to the wet mixture in two portions and mix it till well combined.
  • If the mixture is too gooey, you can always some more flour or refrigerate it for 2-4 hrs or overnight preferably. When the dough is ready it should look something like this-

  • Once the dough is ready, pat little flour on your hand so that the dough doesn’t stick to the hand and make small or large balls from the cookie dough.
  • Once the balls are made, flat it on your palms and put small amount of melted chocolate in the cookie and roll it back carefully into a ball (You could put chocolate cubes too)It should look something like this-

  • Before making the balls preheat the oven to 350 degrees Fahrenheit.
  • Grease the baking pan or use a baking sheet and put the dough balls with some distance between them.
  • Put it in the oven for around 20-25 minutes or till the cookie becomes golden brown whichever comes first.
  • Sprinkle it with some more choco chips and voila it’s ready to be eaten! Enjoy!!!

Savoury Kheer!!! #delishdessert!

It’s been a minute and a half since I have posted a blog because I have been super busy preparing for my final exams. Looking at all the outfits of the day posts, I thought it would be refreshing to write a food blog this time. For all those who don’t know what Kheer is, it is basically just sweetened milk and my mom swears by this recipe because it is always a huge hit whenever guests arrive. I used to think that this recipe takes a lot of work but little did I know it just took half an hour to make it! So as a blogger I had to share this recipe with you guys. Take a look…

Serves up to 10 people!!!

THINGS YOU WILL NEED-

  • 1 LTR milk
  • 1 tin condensed milk
  • 5 tbsp sugar
  • 5 tbsp white rice
  • Handful pistachios, crushed and ground

METHOD-

  • Pre-cooking you need to soak the rice for 3 to 4 hours in water so that it becomes soft.
  • In a mixer grinder, pour the rice, and add little amount of milk till the rice is covered and grind it till it becomes a fine paste.
  • Take the cooking vessel and put on the stove on a low to medium flame.
  • Pour the paste in the vessel, add the rest of the milk, sugar, the entire tin of condensed milk, and the pistachios.

  • Start stirring the mixture on a low to medium flame so that it does not stick to the bottom of the vessel.
  • Keep stirring it until it starts to boil and turn into a thicker consistency.

  • After 20 to 25 of constant stirring, take it off the stove and pour it in the serving dish.
  • Garnish it with more crushed pistachios and refrigerate it to serve.

Mouthwatering CHOCOLATE GANACHE TART recipe!!!!!!

Chocolate is the best thing that is ever happened to us. Feeling sad?? Eat chocolate! Feeling annoyed or depressed?? Chocolate is your remedy! Chocolate is the most versatile ingredient and pairs up beautifully with any dish. My sister and I share the love for chocolate and we literally can hog on any dish that includes chocolate (especially dark chocolate!! ❤ ). So my sister Sara being an ardent lover of chocolate and biscuits decided to incorporate both of these elements and came up with the idea of chocolate ganache tart! And I being the blogger sister couldn’t wait to share these with you guys. So for all the chocolate lovers out there, here is a simple but yummy recipe for chocolate ganache tart…

THINGS YOU WILL NEED-

For the biscuit base-

  • Biscuits (Marie or Hide and Seek)
  • 70 gms butter

For the ganache-

  • Milk chocolate 250gms
  • full cream 200ml
  • Butter 30 gms
  • A pinch of salt

For decoration-

  • Chocolate sprinkles
  • Caramel Sauce (optional)

METHOD-

For the base-

  • Crush the biscuits using a pestle or a blender until it is crumbled.
  • Take it out in a bowl and add butter in it and mix it well.
  •  Take a flat plate and press the biscuit butter mixture evenly to make it the first layer.
  • Freeze it for an hour and allow it to set.

For the ganache-

  • Take the cream and butter in a vessel and heat it until it starts boiling.
  • Place the chocolate in a bowl and a pinch of salt to enhance the taste.
  • After the cream and butter are boiled, pour it into the chocolate bowl immediately and allow it to sit for 2 to 3 min.
  •  Start whipping the chocolate mixture until it melts and mixes completely.

Processed with VSCO with c1 preset

Final-

  • Take the base out of the freezer.
  • Once the chocolate mixture is cooled down pour it over the base.
  • Refrigerate the dish for another hour.

Here comes the cheesiest chicken pasta EVA!!!

I used to think that making pasta is really hard and could be made only by people who are a pro in cooking (my mom 😀 !!!). But one day out of dire hunger with nothing to eat at home except pasta and a full-fledged wifi network with youtube, I decided to try out white sauce pasta only to find that it is one of the easiest recipes to make for lazy asses like ourselves.  And since then it has been my favorite dishes to make at my leisure time. So a blogger, I consider it my responsibility to share this recipe with my fellow mates out here. Check it out…

THINGS YOU WILL NEED-

TO MAKE THE PASTA-

  • Pasta of your choice
  • 1 to 2 Tbsp oil
  • Water

TO MAKE STIR-FRIED CHICKEN-

  • Few pieces of boneless chicken
  • Salt (according to taste)
  • Spices of your choice (in moderation)
  • Oil to stir fry

TO MAKE STIR-FRIED VEGETABLES-

  • 1 Tomato
  • 1 Capsicum
  • 1 Onion
  • 1/2 Cup of loose corn seeds
  • Salt and spices (According to taste)
  • Oil to stir fry

TO MAKE THE WHITE SAUCE-

  • 1 tbsp butter
  • Cheese (the more the cheesier)
  • Salt (according to taste)
  • Spices (according to taste)
  • Maida or all purpose flour (for binding)
  • Few garlic cloves
  • 1/2 Cup milk (for creaminess)

LET’S GET COOKING!!!

TO MAKE THE PASTA-

  • Place the utensil on the stove filled with water up to half the height.
  • Pour 1 to 2 spoons of oil into the water.
  • Put 2 to 3 tsp of salt into the water and allow it to boil.
  • Once it starts boiling , pour in the pasta and allow it to boil for around 5 minutes (the pasta must be slightly undercooked as it will be cooked again in the end)
  • TIP- Try poking one piece, if it is easily getting poked the pasta is ready.
  •  Place a strainer in the sink and pour all the cooked pasta into the strainer and allow all the boiled water get strained through it.
  • After a minute or two, open the water faucet and let the pasta get drenched in the cold water.

TO MAKE STIR-FRIED CHICKEN-

  • Cut the boneless chicken into cubes and allow it to marinate in well for 10 to 15 minutes with a little salt and spices of your choice like chilli flakes or black pepper.
  • Take a small pan and pour 1/2 spn oil into it.
  • Once it heats up, pour the boneless chicken pieces into the pan and stir-fry it for 5 minutes max until cooked on low flame.
  • Take it off the stove once cooked.

TO MAKE STIR-FRIED VEGGIES-

  •   Repeat the same process of the chicken for the vegetables by allowing it to marinate for some time and then stir frying the veggies for max 5 minutes.

TO MAKE THE WHITE SAUCE-

  • Heat up some butter in a vessel.
  • Once heated add some chopped garlic cloves into it and keep stirring it until golden brown.
  • Add up to 1/2 tsp of all purpose flour and stir it after which you need to switch the gas off.
  • Once the gas switch is off, add milk into the mixture and stir it until the flour moulds completely dissolve.
  • Switch on the gas again, add cheese into the sauce until it melts.
  • Add salt and spices into it according to your taste and preference and allow it to boil into a thick creamy consistency.

FINAL STEP-

  • Once the pasta, sauce, veggies and chicken are ready ; you just have to take a vessel and mix all the ready ingredients together.
  • Cook it for a minute or two and viola!!! your pasta is ready to be eaten.
  • You could decorate your pasta by sprinkling some extra cheese and black pepper over it and can serve with a toasted bread or two.

The most delicious coffee biscuit pudding evah!!!

I could quit coffee but hey I am not a quitter ! This is my excuse when I see coffee every single time. Since coffee is my fav ingredient on this planet earth (literally! :p), it is only fitting to share one of the easiest and mouth watering recipes I love hogging on. Enjoy…

THINGS YOU WILL NEED!

  • Biscuits of your choice (preferably marie biscuits!)
  • Your fav brand of coffee
  • 1 condensed milk tin
  • 1 Nestle or Amul cream tin
  • Wafer chocolates of your preference (for decoration)
  • Sugar (if you cannot get hold of condensed milk)
  • Water

HOW TO MAKE IT?

One reason why this particular dessert is my favorite is because this is literally the easiest recipe to make and I being the most laziest creature you will come across can make this in just 10 minutes! (:D)

  • take some water in a  vessel, add 1 tspn of coffee along with 2 to 3 tspn of sugar and let it boil for good 10-15 min.
  • open your condensed milk tin and cream tin, pour it in a bowl and whisk it till it turns into one good heavenly mixture.
  • open the wafer chocolates and crush the chocolate using a pestle or any hard object until it is completely mashed into a chocolate powder consistency.
  • once your coffee is boiled, take it off the stove and allow it to cool down .

  • once the liquid is cooled, start dipping the biscuits into the liquid once before placing it in the serving bowl.
  • once the area of the bowl is covered pour some of the cream mixture over the biscuits till it is covered and pour 1-2 spoons of coffee liquid over it to give it an extra coffee boost .
  • repeat the same method again and again until the bowl is covered halfway full (or you could keep on layering it, the more the tastier!:P)

Don’t worry it will all come together!! :p

 

  • once you are done layering it, you are almost done but hey we need to decorate it with the crushed chocolate to give it the finishing touch. you could decorate it with any favorite sweet or just eat it the way it is (your wish!).
  • once your dessert is ready, freeze it for over 1 to 2 hours and viola! Your pudding is ready.
